Mrs Gibson's shortbread recipe

Ingredients

  • 4 oz margarine or butter

  • 2 oz caster sugar

  • 2 oz cornflour/ground rice/semolina

  • 4 oz plain flour

Mix sugar and butter. Add sugar, then flour and form to a ball. Knead until smooth.

Cut out 2-3 mm thick. Sprinkle with caster sugar. Bake 150C for 10 mins or more depending on how brown you like them.

Children’s version

  • 2 good teaspoons margarine

  • 2 teaspoons caster sugar

  • 2 teaspoons cornflour (not heaped)

  • 4 teaspoons plain flour (not heaped ones)

Mix margarine and sugar together first, and add flours.

If it doesn't knead together into a football, add a few drops of milk. If it’s too sticky, add sprinkle of flour!

Don’t forget to sprinkle a little flour on the surface and their hands to stop it sticking when you flatten and cut out the dough shapes.

The children found it easier to flatten the shortbread with their hand, rather than roll with a rolling pin, usually too thin. Don't make them too thin or they break and burn!

Be adventurous, add choc drops, sultanas etc
